PIZZA STUFFED PITAS
Ingredients
4 (8 inch) pita pockets
1/4 cup chopped sliced pepperoni
1/2 cup prepared pizza or marinara sauce
1/2 teaspoon dried oregano
8 oz shredded mozzarella cheese
1/4 cup chopped pitted ripe olives
olive oil for brushing
Directions
Preheat the oven to 450°F
With a sharp knife, halve the pita pockets horizontally into 2 rounds.
Chop enough sliced pepperoni to measure 1/4 cup.
On the cut side of 4 of the pita halves, spoon 2 Tbsp sauce; sprinkle with a pinch of the oregano and 1/4 each of the shredded mozzarella, pepperoni, and olives. Top with the remaining pita halves, cut side down.
Place the stuffed pitas on a baking sheet and brush with oil olive oil. Weight with another baking sheet. Place on lowest rack of oven and bake for 5 mins. Turn, brush with olive oil, and bake for 5 mins.
Serve
Transfer the stuffed pita onto plates, cut into wedges, and serve hot.
