Curried chicken salad

Curry powder adds a zest to any recipe to which it is added. The same is applicable when you cook a chicken salad with curry powder.

 Curried chicken salad


Good quality mayonnaise- classic- 1 cup
3 whole chicken breast along with bones
3 tablespoons of curry powder
2 stalks of celery diced- should yield one cup
¼ cup of raisins
Roasted cashews 1 cup
1/3 cup dry white wine
Olive oil
Salt and pepper to taste


Preheat the oven to 350 F and then place the chicken breasts and rub it with olive oil on a sheet pan. Sprinkle the chicken with salt and pepper. Roast the chicken for 40 minutes until it is cooked completely. Set it aside to cool down enough.
Prepare the dressing combining the mayonnaise and the curry powder, white wine, salt and pepper and blend it in a blender until smooth. Then cover the chicken with the dressing and add the celery, scallions, and raisins and mix them well. Serve at room temperature.
