Balsamic dressing over chicken with strawberries




Strawberries are always popular among children and so is chicken. The unusual combination of both surprisingly tastes delicious when blended the right way.

 Balsamic dressing over chicken with strawberries


Ingredients:
  1. Thinly sliced chicken cutlets- 1 pound of chicken
  2. ½ tea spoon black pepper grounded
  3. 1 table spoon of vegetable oil
  4. Corn meal- ½ cup
  5. Flour- ½ cup
For the dressing:
  1. 6 tablespoon of olive oil
  2. 2 tablespoon of balsamic vinegar
  3. ½ cup strawberries- halved
  4. ½ tsp chopped mint- fresh
Salad:
  1. ¼ cup of nuts
  2. Lettuce washed and dried- 2 cups
  3. ¼ cup cheese




Directions:
In a blender, blend the olive oil, balsamic vinegar, strawberries, mint and little bit of sugar together until it is completely smooth. Pour half of the dressing in a zip lock bag and place the cutlets within and let the marinade get soaked for thirty minutes at least. Meanwhile toast the nuts. In a bowl combine corn meal, flour, salt and pepper. Coat the cutlets with this mixture. Place the chicken on a sauté pan and fry it for 3-4 minutes each side until it turns brown. In a plate combine the lettuce, nuts and remaining dressing and also cheese and add the cutlets to it.
