Baked chicken in mustard and honey

Baked version of any preparation is light on the stomach. When chicken is baked and infused with the favours of mustard and honey, the resultant is a perfect meal for all.
Baked chicken in mustard and honey


Boneless, de-skinned chicken breasts- 4 pieces
Virgin olive oil- 2 table spoon
Dijon mustard- 2 table spoons, usual stone ground mustard would also do
Dried tarragon- 2 table spoon
Pure honey- 2 table spoon or more as per your taste
Salt and pepper as per taste


In a zip lock plastic bag, mix the chicken with extra virgin olive oil, honey, salt and pepper and mustard and let it marinade for up to 24 hours if you can or at least overnight. Preheat the oven to 350 F for approximately 15 minutes and then place the marinade and the chicken on a glass dish, sprinkling the dried tarragon from the top. Bake the chicken for 30 minutes or until it is thoroughly cooked and soft. Puncture the chicken and if it produces clear juice, you can be sure that it is done.
