Fried Salmon Filets


2 salmon filets
my all purpose seasoning (2 T. smoke paprika, 1 T. brown sugar, 1 T. salt, 1 T. Adobo seasoning, 1 tsp. black pepper...combine and store in an airtight container.)
2 - 3 T. olive oil


Take each filet and pat it dry, season well all over with the all purpose seasoning and put on a plate, wrap in plastic wrap and place in the fridge for at least 1 hour. When ready to cook, heat the oil in a skillet over med. high heat. Place each filet in the heated oil, skin side down and fry for 2-3 minutes per side or until it flakes and feels firm to the touch. I served ours with sauted asparagus.
